Unniyappam

Take 2 bananas and mash it with jaggery or brown sugar, add ground ginger, ground cardamom and rice flour with lil bit salt.
Then u can make in paniyaram vessel and make it immediately Or u can add baking soda and let it sit for 3/4 hrs and then make it.

Pulav & Egg curry.

Egg curry recipe:

In heated oil, add mustard, jeera, curry leaves and bay leaves. Then add ginger, garlic, onions and saute them till translucent. Add chopped tomatoes with salt, turmeric and chilli powder and garam masala powder. Close the lid and let them cook.

Meanwhile, grind coconut, jeera, pepper, kasakasa. Add this after onions and tomatoes have cooked and add water and salt acc. to ur taste. Cover it and let it boil lil bit till coconut smell goes off and then crack the eggs and drop it. Cover the lid and let it cook for sometime. Dont mix the eggs and just run the spatula around so that the eggs dont stick neither to the pan nor to each other.

Newly tilled land, fresh compost smell, baby plants waiting at home, warm temperature, heavy rain downpour, greased garden tools in the garage.

Cant wait to see my dream organic garden grow!

Ragi coconut cookies.

Its official guys! I have been diagnosed with a mild case of cookiephobia.
I dream about brown sugar. Baking soda is my new best friend and I love hanging out anywhere near baking trays.
If you come home, you will be loaded with sweet calories!
Somebody please hide my oven :)
Ragi Coconut Cookies:
Ingredients (240 ml cup used)
•¾ cup dried coconut
•¾ cup ragi flour fried in pan
•½ cup plain flour
•5 oz unsalted butter
•2/3 cup brown sugar
•1 tbsp. Coarse sugar
•1 to 2 tsp. Vanilla extract
•1 tsp baking soda
•1/2 tsp salt
•1 small egg
Instructions
1.Beat the butter and sugar till fluffy. Add egg and vanilla. Beat till well incorporated.
2.Mix Ragi flour, plain flour, salt, baking soda and coconut and mix well.
3.Mix flour mix with butter mix lil by lil and make a moist dough until everything is thoroughly mixed.
4.Cover and refrigerate for at least 1 hour.
5.Preheat the oven to 180 C.
6.Make balls and flatten them slightly on the baking sheet. Roll it in sugar
7.Bake these till done. Takes around 15 mins for me.
